Salad season is upon us, and I am so ready to take a deep dive into my favorite salad recipes this summer!

I am a big fan of this simple and delicious salad. It’s a great way to make use of summer produce, and it takes very little time to prepare. This cucumber tomato feta salad is made with cucumbers, cherry tomatoes, cubed feta cheese, and fresh herbs, all tossed in a delicious oil and vinegar vinaigrette.

It’s perfect for hot summer days, a light lunch, a picnic, or a potluck. So let’s get to it!

Ingredients needed

Making this cucumber tomato feta salad is super easy and requires just a few simple ingredients!

Here’s a bit more about what I used:

  • Cucumber: To make this tomato feta salad, you’ll need one whole English cucumber. It adds a bit of crunch, which is a nice contrast to the feta cheese. Make sure to dice the cucumber nice and even.
  • Tomatoes: I like to use cherry tomatoes here for their sweet flavor and small, bite-sized pieces. I bought 2-pint boxes of tomatoes and cut them in half.
  • Feta cheese: Feta cheese is essential in this Greek salad! It’s salty and creamy, and it is the perfect topping for this salad. I decided to buy a block of feta and chopped it up myself instead of buying crumbled cheese. Either way works!
  • Parsley: To add a pop of flavor and color, I added chopped fresh parsley. It gives the salad that classic Greek taste! You’ll need 1/4 cup.
  • Garlic: I love to add 2 minced garlic cloves to this salad dressing. It adds a nice hint of flavor without it being too overpowering.
  • Oregano: I added 1 teaspoon of oregano for an extra boost of flavor. It pairs nicely with the feta and herbs.
  • Olive Oil: To make the salad dressing, you’ll need 1/4 cup of olive oil. It’s a healthy and flavorful way to dress the cucumber and tomato salad.
  • Red Wine Vinegar: To balance out the olive oil, I added 2 tablespoons of red wine vinegar. It adds a nice acidic bite that completes the dressing.
  • Salt and Pepper: A must for any recipe!

Then, add olive oil, vinegar, garlic, oregano, salt, and pepper and mix everything until well combined.
